1823 Historic Rose Hill Inn

   

Here are two very different recipes that can be made in heart shaped casserole dishes.  Both are very popular here at Rose Hill Inn and are two of the signature dishes we serve for our breakfasts.  We hope you will enjoy making them.  Or even better, let us make them for you!  

Caramel Apple French Toast Chili Relleno Egg Casserole

1/2 cup butter

1 cup brown sugar

2 Tbsp water

2 sliced apples

cranberries (optional but decorative)

1 loaf of dense bread

5 eggs

1 ½ cups milk

2 tsp vanilla

 

In medium saucepan, combine butter, and brown sugar and heat over med-low heat until it bubbles.  Add water and continue cooking until sauce becomes thick and foamy.  Pour into baking dishes, sprayed with Pam.  Cool.

Place sliced apples over cooled caramel syrup in baking dish.  Sprinkle cranberries between the slices. Cover the fruit with slices of bread.  Do NOT use soft white bread!! 

In a blender combine the eggs, milk and vanilla and blend thoroughly.  Pour the liquid mix over bread.  Cover and refrigerate overnight. Bake in 350 degree oven 30 minutes.  Cool about 5 minutes and then invert the mixture on warmed plate.                       Makes 6 servings

10 eggs

½ cup unsifted flour

1 tsp baking powder

¼ tsp salt

¼ cup butter, melted

16 oz low fat small curd cottage cheese

1 pound Monterey Jack Cheese, shredded

¼ tsp ground cumin

1-2   4 oz cans of chopped green chilies

 

 

Heat oven to 350ºF and grease small 

baking dishes.  In large bowl, beat eggs until 

light and lemon colored.  Add all ingredients 

except chilies.  Mix.

 

Fill each dish with mixture and spread.  Top with green chilies.  Top with another layer of mixture.  Bake about 30 minutes until top is browned and center firm.  It is best served hot from the oven.

 

HINT:  you can make the egg mixture the night 

before and assemble it just before baking.

 

I like to fry my own tortilla strips in corn oil and decorate the tops.  Of course, what else goes great?  Homemade salsa!    

 

Makes 8 servings

 Another recipe that is often requested .. Banana Stuffed French Toast 

This is probably one of the most popular entrees we serve.  An easy recipe, all you need to start is a loaf of purchased French bread...unsliced (we use multi-grain). Slice the bread into pockets. Don’t use the ends. Start slicing the first slice all the way through the loaf, the second only ¾ of the way (to make a place to stuff your bananas) through, the third all the way through and so on. This makes a slice that is hinged.

The rest of your ingredients are:

  • 1 loaf of bread (mentioned above)
  • 2-3 bananas, not overripe
  • ¼ cup brown sugar
  • ¼ cup pecans 
  • 3 large eggs
  • ¾ cup milk (or cream if you want it richer)
  • 1 Tbsp. sugar
  • 2 tsp. vanilla
  • ¼ cup butter 

 

Slice the bread as we discussed above, with each slice being about ½ inch (1 inch total). Peel and slice your bananas. Lay the bananas in the pocket, and stuff in a few pecans, then add brown sugar. Mix together your eggs, milk, sugar, and vanilla. Dip each French toast piece into egg mixture and place into skillet with melted butter. Cook and turn. It helps to cook them slowly and cover the pan after you have turned them to caramelize the sugar.

Enjoy these wonderful banana toasts sprinkled with powdered sugar and maple syrup.  We serve ours with eggstravaganza and ham.
